Latest version of Acrobat Pro DC is supposed to be miles better at that stuff.

If you don't have it, feel free to email me the file. Wouldn't mind trying it out.

In the full version of adobe acrobat you can just click save as and save it as a word doc and it'll do the rest. Not always the best results, but it tries its best nonetheless.

Any recommendations on the easiest way to take an A4 form and convert it into something like a word doc that I can then edit?

Is there OCR type apps that will do that sort of thing (I've only ever seen simple word OCR stuff)

Preferably on the mac but can do PC if needs be
