Are we talking about movies in iTunes or about music?
If movies (and on a Mac), then use a toslink from the headphone jack to your surround receiver. All Macs have both analogue and digital audio in the headphone plug, just use the right cable.

In what sense? if you line out into a pro logic amp then it'll render a stereo signal into surround. if music isnt 5.1 encoded though you'll only ever get a converted surround. The only stuff i know of thats actually mixed and mastered into 5.1 for example is 'Super Furry Animal' stuff.
