Stalling is when not all the sugar is converted into alcohol or C02, if it tasted disgusting then its probably a bacterial infection from some equipment not being sterilised properly. The only other thing I can think of is if it got cold it may have stalled, the temperature of the mash tun at work is around 70 degrees celsius and the hot liquor tank or kettle as its known is around 100 degrees celsius, the fermenting vessels are around the 20 degree mark. Also if it got too hot, it could produce off flavours. My guess would be bacteria infection. See if you can get some peracitic acid https://en.wikipedia.org/wiki/Sterilization_%28microbiology%29#Peracetic_acid we use it after the casks have been washed (with caustic 90 and rinsed with clean water) to sterilise the casks and poly pins its also non tainting so doesn't matter if you put a hydrometer or thermometer into the beer after cleaning them (ours are stored in it) Also I've never worn gloves when cleaning with peracitic acid but it may sting if it gets into a cut, caustic 90 on the other hand will burn the fuck out of you! Also, the jug come straight out of the dishwasher but wasn't sterilised. In my haste and half way through I realised the error of my ways, as when we did it with a "proper" kit it was absolutely lovely and worked a treat! [/quote]
