Don't mean to keep moaning about your photos, don't take it personally they are nice enough. Thing that bugs me is that these days good spec cameras are so cheap that any tom dick and harry now has one and goes out taking photos of the same things as everyone else. These days you see less and less photos which are genuinely unique and interesting - angles, subjects etc. not done before. I think that's where photography of any value is

Could do it with a phone camera if you wanted.

Just need 3+ pictures, one correct exposure, one either side of that.

you need something that allows you to adjust shutter speed on its own really to achieve the best effects. youd only get -2 to +2 exposure with a phone cam which isnt really enough, plus i think with phone cams and cheap cams it doesnt actually adjust the exposure as such it just brightens the image with software rather then by lietting more light in so you might not get any more details. but yes the theory is the same for anything

This one really shows what you can use hdr for, you wouldnt be able to get the details of the nearby tree and get all the details of the landscape past the style
