The Blackberry data is secure unless you have access to the blackberry servers, which the US may have, but the UAE obviously don't.

Encryption that the US military can't crack isn't that difficult, SSL as an example.

Phone calls are a different matter, GSM phone calls can be intercepted for around a £1000 now.
